Founded in 1931, Dimock Cheese began when 40 local dairy farmers came together in a small South Dakota town with a simple goal: make great cheese the right way. Nearly a century later, that same mindset still guides everything we do. Dimock may be small, but our standards have always been anything but.
Farm to Table
The milk that goes into our cheese comes from dairy farms just miles away. That closeness allows us to process milk quickly and carefully, with respect for the ingredient and the people behind it. Less distance means more freshness—and you can taste the difference in every bite.
Traditional Cheesemaking
We still use traditional cheesemaking methods—no shortcuts, no mass-production mindset. It’s how we’ve always done it, and it’s why our cheese delivers a richer, creamier texture, bold yet balanced flavor, and consistency you can trust.
100 Years of Craftsmanship
Dimock grew steadily over the decades, reaching peak production in the 1970s with more than one million pounds of cheese made annually. While the industry changed, our commitment to quality never did. In the early 2000s, we expanded our lineup from seven flavors to more than 30, adding cheese spreads and butter along the way.
Honoring the Past. Building the Future.
In 2015, Dimock entered a new chapter when it transitioned from a cooperative to local ownership—led in part by a descendant of one of the original founding farmers. Today, cheese is still made in our original downtown plant, while a modern facility along Highway 37 supports retail, packaging, and distribution.
