Recipe

Bacon & Onion Breakfast Burrito

Ingredients
  • 4 large flour tortillas (10-inch)
  • 6 large eggs
  • 1/4 cup milk or cream
  • 1 cup diced cooked potatoes (or hash browns)
  • 6 slices bacon, cooked and crumbled
  • 1/2 small onion, finely diced
  • 1 cup shredded Bacon & Onion Cheese
  • 2 tbsp butter or oil
  • Salt and black pepper to taste
  • Optional toppings: salsa, avocado slices, sour cream, hot sauce

Step 1

Prep the filling: o Heat a skillet over medium heat and add 1 tbsp butter or oil. Sauté the diced onion until soft and slightly caramelized, about 4–5 minutes. o Add the cooked potatoes and sauté for another 3–4 minutes until lightly crispy. Remove from skillet and set aside.

Step 2

Scramble the eggs: o In a bowl, whisk together eggs, milk, salt, and pepper. o Heat 1 tbsp butter in the skillet over medium-low heat. Pour in the eggs and cook gently, stirring frequently, until soft and fluffy.

Step 3

Assemble the burritos: o Lay out tortillas and divide scrambled eggs among them. Top with sautéed potatoes and onions, crumbled bacon, and a generous handful of Bacon & Onion Cheese. o Fold in the sides and roll up tightly.

Step 4

Melt the cheese and crisp the burrito: o Heat a clean skillet over medium heat. Place burritos seam-side down and cook 2–3 minutes per side until the tortillas are golden and the cheese inside is melted.

Step 5

Serve: o Slice in half and serve with optional toppings like salsa, avocado, or a drizzle of hot sauce.
