Recipe

Bleu Cheddar Buffalo Chicken Stuffed Shells

Ingredients
  • 1 box jumbo pasta shells
  • 2 cups cooked chicken, diced or shredded
  • 1½–2 cups Bleu Cheddar Cheese, shredded (plus extra for topping)
  • ½ cup celery, finely diced
  • ¼ cup onion, finely diced
  • ½ Cup Ranch dressing
  • ½ cup buffalo wing sauce (adjust to taste)
  • Salt & pepper, to taste
  • Optional garnish: chopped parsley, green onions

Step 1

Cook the shells Bring a large pot of salted water to a boil. Cook jumbo shells until just al dente. Drain and set aside to cool slightly.

Step 2

Preheat oven to 375°F (190°C). Lightly grease a baking dish. Spoon the buffalo chicken mixture into each shell and arrange in the dish.

Step 3

Prepare the filling In a large bowl, combine chicken, celery, onion, and shredded Bleu Cheddar. Season lightly with salt and pepper.

Step 4

Make the sauce In a separate bowl, mix ranch dressing and buffalo wing sauce until smooth. Pour over the chicken mixture and stir until evenly coated.

Step 5

Stuff the shells top & bake Sprinkle additional Bleu Cheddar generously over the stuffed shells. Cover loosely with foil and bake for 20 minutes. Remove foil and bake an additional 10 minutes, or until cheese is melted and bubbly.

Step 6

Serve Let cool for 5 minutes. Garnish if desired and serve hot.
