Recipe

Creamy Colby Chicken & Broccoli Casserole

  • Serves – 6-8
Ingredients
  • 2 cups cooked chicken, diced in large chunks
  • 8 oz Colby Cheese, shredded
  • 1 can (10.5 oz) cream of mushroom soup
  • ½ cup sour cream
  • ½ cup milk
  • ½ cup onion, finely diced or 1 Tbsp minced dried onion
  • 1 tsp garlic powder
  • 1 Tbsp Curry Powder (optional, but recommended)
  • Salt & pepper to taste
  • 6 slices of bread
  • 2 Tbsp olive oil
  • Cooked white rice

Step 1

Preheat oven Preheat oven to 375°F and lightly grease a baking dish.

Step 2

Mix the Sauce In a medium sauce pot, combine cream of chicken soup, sour cream, milk and seasonings. Heat through stir until smooth. Set aside

Step 3

Prepare Croutons Cut bread into cubes, toss lightly in olive oil, toast in a skillet or in the oven.

Step 4

Layer the Casserole In a 9x9 or 2 qt baking dish, layer chicken, broccoli, ½ sauce, Colby (reserve some for topping) then the other ½ sauce. Top with croutons and remaining colby

Step 5

Bake Bake for 25–30 minutes, until hot and lightly golden on top.

Step 6

Serve Let rest for 5–10 minutes before serving.
