Recipe

Cool as a Cucumber Salad with Dill Cheese

  • Serves – 10-12
Ingredients
  • 8 oz Dill Cheese, diced
  • 16 oz Rotini cooked & drained
  • 3 medium cucumbers, thinly sliced
  • 1 cup cherry tomatoes, halved
  • ½ red onion, thinly sliced
  • ½ cup olive oil
  • 1 cup mayonnaise
  • 1 Tbsp dried parsley
  • 1 tsp Curry Powder
  • 1 tsp Paprika
  • 1 tsp Garlic Powder
  • 1 tsp dried thyme
  • Salt & pepper to taste

Step 1

Make the dressing In a small bowl, mix olive oil mayonnaise and herbs and spices until well combined. Set aside.

Step 2

Prep the vegetables Thinly slice cucumbers and red onion. Halve cherry tomatoes.

Step 3

Combine In a large bowl, toss pasta, cucumbers, tomatoes, and red onion with the dressing until evenly coated.

Step 4

Chill Cover and refrigerate for 1–2 hours to allow flavors to develop.

Step 5

Add the cheese & serve Gently fold in diced Dill Cheese just before serving. Toss lightly and serve chilled.
