Recipe

Garden Medley Zucchini with Pretzel Crunch

Ingredients
  • 3–4 medium zucchini
  • 1 tablespoon olive oil
  • Salt and black pepper, to taste
  • ¾–1 cup shredded Garden Medley Cheese
  • ½ cup crushed pretzels
  • 2 tablespoons butter, melted
  • Optional garnish: fresh herbs (parsley, chives, or dill)

Step 1

Prep the Zucchini Preheat oven to 400°F (205°C). Slice zucchini lengthwise into halves or quarters, depending on size. Arrange on a baking sheet, cut side up.

Step 2

Season & Roast Drizzle zucchini with olive oil and season lightly with salt and pepper. Roast for 8-10 minutes, until just tender.

Step 3

Make the Pretzel Topping In a small bowl, combine crushed pretzels with melted butter. Sprinkle evenly over the cheese-topped zucchini.

Step 4

Add the Cheese and Topping Remove from oven and sprinkle generously with shredded Garden Medley Cheese.

Step 5

Bake until golden and cheese is melted.
