Recipe

Monterey Jack Chicken Flatbread

  • Serves – 4-6
Ingredients
  • 1 package refrigerated flatbread or pizza dough
  • 2 cups freshly shredded Monterey Jack cheese
  • 1 cup cooked chicken, diced or chopped
  • ½ cup cherry tomatoes, halved
  • ¼ cup thinly sliced red onion
  • 1–2 tablespoons olive oil
  • Salt and freshly ground black pepper, to taste
  • Optional: crushed red pepper, or fresh herbs for finishing

Step 1

Preheat oven to 425°F (220°C). Line a baking sheet with parchment paper.

Step 2

Prepare the dough by rolling or stretching it into a rectangle or oval. Transfer to the baking sheet and lightly brush with olive oil.

Step 3

Add the cheese evenly over the flatbread, leaving a small border around the edges.

Step 4

Top with chicken, tomatoes, and red onion, seasoning lightly with salt and pepper.

Step 5

Bake for 12–15 minutes, or until the crust is golden and the Monterey Jack is fully melted and bubbling.

Step 6

Cool slightly, slice, and serve warm.
