Recipe

Pepper Colby Jack Taco Salad

  • Serves – 6-8
Ingredients
  • 4 large tortillas
  • 1 cup shredded Pepper Colby Jack cheese
  • 1/2 cup onions
  • 1/2 cup multicolored bell peppers
  • 1-pound cooked ground beef with taco seasoning
  • 1/4 cup pickled jalapeños or fresh diced jalapeños (optional)
  • 1 can of corn kernels
  • 1 can of black beans
  • 1 head of lettuce chopped
  • 1/2 cup Pico de Gallo or diced fresh tomatoes
  • Optional: sour cream or crema for drizzling

Step 1

Prep toppings: o Sauté onion and bell pepper until slightly soft. o Heat black beans and corn with a tablespoon of lime juice, just until warmed through. o Cook ground beef with desired taco seasoning. o Shred Pepper Colby Jack Cheese

Step 2

Taco Salad Shells: o Preheat oven to 350°F o Gently scrunch tinfoil into a disk about 4 inches tall and 5 inches wide, keep it loose. Lightly oil both sides of the tortillas and loosely drape over the foil on a large sheet pan. o Bake 8 min. check to see if the tortillas are rigid, remove foil and place face up for 3-4 minutes until golden brown on both sides

Step 3

Build the salad: o Layer lettuce in the shells layer beef, beans and corn onion, bell pepper, and finish with salsa and sour cream.
