Recipe

Pepper Jack Stuffed Bell Peppers

  • Serves – 4
Ingredients
  • 3 large bell peppers (any color), halved and seeded
  • 1 lb ground beef
  • 1 cup oats (old-fashioned) or cooked rice
  • 1 cup Pepper Jack cheese, shredded + more for topping
  • ½ cup onion, diced
  • 1 cup diced tomatoes (drained)
  • 1 egg
  • 2 tsp garlic powder
  • 2 tsp Italian seasoning
  • Salt & pepper to taste
  • 1 tbsp olive oil

Step 1

Preheat oven Preheat oven to 400°F

Step 2

Prep the peppers Place halved bell peppers in a baking dish, cut side up.

Step 3

Combine Mix ground beef, oats, diced tomatoes, garlic powder, Italian seasoning, salt, and pepper. Mix well, then fold in shredded Pepper Jack cheese until evenly combined.

Step 4

Stuff the peppers Divide the filling evenly into each pepper half, pressing gently to fill. Filling should mound over slightly.

Step 5

Bake Bake for 35-40 min, sprinkle cheese on top. Return to the oven and bake for 10 minutes, until internal temp reaches 165 degrees.

Step 6

Serve Let cool slightly and serve warm.
