Recipe

Ranch Cheese Twice-Baked Potatoes

Ingredients
  • 4 large russet potatoes
  • 4 tablespoons butter, melted
  • ½ cup sour cream
  • ¾–1 cup shredded Ranch Cheese (Colby Jack with Ranch seasoning), plus more for topping
  • ¼ cup milk or heavy cream (as needed)
  • Salt and black pepper, to taste
  • Optional garnish: chopped parsley or green onions

Step 1

Bake the Potatoes Preheat oven to 400°F (205°C). Scrub and dry the potatoes, then pierce each several times with a fork. Bake directly on the oven rack for 50–60 minutes, or until tender when pierced.

Step 2

Prepare the Filling Allow potatoes to cool slightly. Slice each potato lengthwise and carefully scoop out the flesh into a mixing bowl, leaving a thin shell intact.

Step 3

Mash & Mix Add melted butter, sour cream, shredded Ranch Cheese, and milk or cream to the potato flesh. Mash until smooth and creamy. Season with salt and pepper to taste.

Step 4

Fill the Potato Shells Spoon or pipe the filling back into the potato skins, mounding slightly. Sprinkle additional Ranch Cheese over the tops.

Step 5

Bake Again Place filled potatoes on a baking sheet (or nestle in foil, if desired). Bake at 375°F (190°C) for 20–25 minutes, until heated through and the tops are golden and bubbly.

Step 6

Finish & Serve Garnish with chopped parsley or green onions if desired. Serve hot.
