Recipe

Raspberry Jalapeño Chicken Quesadillas

Ingredients
  • 2 cups Raspberry Jalapeño Cheese, shredded
  • 2 cups cooked cubed chicken
  • 4 large flour tortillas
  • ¼ cup red onion, finely diced (sauté if desired)
  • ¼ cup fresh cilantro, chopped for garnish (optional)
  • • ¼ cup sour cream
  • • 2 teaspoons lime juice
  • • 2 tablespoons Raspberry Jam
  • • 1 teaspoon Red Chili Flake

Step 1

Make the Lime Crema & Raspberry Sauce In a small bowl, whisk together sour cream, lime juice, Set aside. Mix Raspberry Jam and Chili flakes, microwave for 10 seconds at a time until thin and smooth. Set aside.

Step 2

Build the Quesadillas Lay out the tortillas. On one half of each tortilla layer: • cubed chicken • diced red onion • a generous handful of Raspberry Jalapeño Cheese about ¼ cup Fold the tortilla over to close.

Step 3

Cook the Quesadillas Over medium low heat. Cook each quesadilla for 3–4 minutes per side, until the tortilla is golden and crisp, and the cheese is fully melted.

Step 4

Serve Slice into wedges and drizzle with lime crema and Raspberry Sauce. Sprinkle with fresh cilantro if desired.
