Recipe

Tomato & Basil Cheese UN-Stuffed Pork Chops

  • Serves – 4
Ingredients
  • 4 thick-cut pork chops (1–1½ inches thick)
  • 8 oz Tomato & Basil Cheese, shredded
  • 1 tbsp olive oil
  • 1 tbsp Dimock Butter
  • 2 cloves garlic, minced
  • 1 egg yolk
  • ¼ cup Sundried tomatoes chopped
  • 1 cup frozen spinach drained and pressed dry
  • Salt & pepper to taste

Step 1

Prep the pork chops Preheat oven to 400 degrees. Dry chops, season with salt and pepper. Set aside.

Step 2

Prep filling Mix Spinach, shredded cheese, garlic and egg yolk with a fork until combined. Cover and refrigerate.

Step 3

Sear Heat olive oil and butter in a large oven-safe skillet over medium-high heat. Sear pork chops for 3–4 minutes per side until golden brown.

Step 4

Add flavor & finish If needed transfer chops to a sheet pan, bake for 10 minutes, remove chops and top generously with cheese spinach mixture. Return to oven for about 10 min or until the internal temperature reaches 145°F and cheese is melted and golden.

Step 5

Rest & serve Let rest for 5 minutes before serving. Garnish with fresh basil and a light drizzle of balsamic glaze if desired.
