Wild Italian Chicken Panini

Ingredients
  • 2 ciabatta rolls, sliced
  • 1 grilled chicken breast, sliced
  • 4 slices Wild Italian Cheese (white cheddar with Italian ramson and herbs)
  • ¼ cup sun-dried tomatoes, sliced
  • 1 cup spring mix lettuce
  • 1 tablespoon olive oil or butter (for grilling)
  • ¼ cup mayonnaise
  • 1 small garlic clove, finely minced
  • 1 teaspoon lemon juice
  • ½ teaspoon Italian seasoning
  • Pinch of salt and black pepper

Step 1

. Make the Aioli In a small bowl, mix together mayonnaise, minced garlic, lemon juice, Italian seasoning, salt, and pepper. Stir until smooth and refrigerate until ready to use.

Step 2

Prepare the Sandwich Spread the herb garlic aioli on the inside of both halves of the ciabatta bread. Layer the sandwich with: • sliced grilled chicken • sun-dried tomatoes • slices of Wild Italian Cheese • fresh spring mix Top with the other half of the bread.

Step 3

Grill the Panini Lightly brush the outside of the bread with olive oil or butter. Place the sandwich in a panini press or skillet over medium heat. Grill for 4–5 minutes, pressing gently, until the bread is golden and crisp and the Wild Italian Cheese has melted.

Step 4

Serve Slice in half and serve warm.
